Eggnog Pie Recipe

1 baked pie crust

2 eggs, separated

1/2 cup sugar

1/2 tsp. salt

1 cup milk

1 envelope plain gelatin

2 Tbsp. cold water

2 tsp. sherry/rum flavoring

1/2 cup heavy cream, whipped

1/8 tsp. nutmeg


Beat egg yolks slightly. Add sugar, salt, and milk. Cook over hot water, stirring constantly, until mixture coats a spoon. Add nutmeg. Sprinkle gelatin over cold water. Add to hot mixture and stir until gelatin is dissolved. Cool. Meanwhile, beat egg whites until stiff. Add sherry/rum flavoring to egg yolk mixture. Fold egg whites and whipped cream into egg yolk mixture. Pour into baked shell and chill until firm. Garnish with more whipped cream and sprinkle with additional nutmeg.
